2 egg white, beaten stiff
pinch of salt
¼ - ½ c fruit pulp
½ T lemon juice
¼ c sugar, more or less as needed

Directions:
METHOD 1: Beat salt and sugar gradually into egg white, then add fruit in same way. Pile lightly onto a glass serving dish. Chill.
METHOD 11: Make as for Method 1 but bake in oiled dish set in hot water in a slow to moderate oven (325° -375° F.) until firm. Serve from baking dish with soft Custard.

Apricots, prunes or peaches are a good choice of fruits. Orange juice (¼ cup) may be substituted for fruit pulp. Makes 2 servings.
