1 lb breakfast sausage
1 med red pepper chopped
1/2 cup green onion chopped
1 small onion chopped
2 1/2 cup cheddar cheese--divided
10 whole flour tortillas
2 cups 1/2 and !/2 cream
6 large eggs
1 Tbls flour
Salsa and sour cream--to serve

Directions:
Directions:
Fry pan on stove --fry sausage, onions and peppers let cool. Add 2 cups cheese. Use a 1/3 cup measuring cup and scoop into flour tortillas.Roll and Place seam side down in glass 9 x 13 dish. Mix the rest of ingredients except the rest of cheese. Pour over tortillas over night in the refrigerator.
Bake covered with tin foil for 40 min
Top with cheese and cook 10 more min on 350
Serve with Salsa and sour cream and hot sauce
