2 T cooking oil
1 lb. ground round
1 onion, chopped
1 clove garlic, diced
1 t chili powder
1 green bell pepper
2 c diced canned tomatoes, drained
½ c ripe olives chopped
2 jalapeños, chopped
2 T corn meal
1 c corn meal
3 c water
½ c grated cheese

Preheat oven to 400º. In large cast iron skillet, brown hamburger in cooking oil. Add onions, bell pepper and garlic. Add drained tomatoes and mix well. Sprinkle in 2 T corn meal; stirring meat mixture constantly to prevent clumping of corn meal. Season with chili powder and salt and pepper to taste. Finally, add olives and jalapeños. Simmer for 10 minutes, then set skillet aside. In saucepan, sift corn meal slowly into boiling water. Cook 15 minutes. Spread cooked corn meal evenly over meat mixture. Bake in 400º oven for 20 minutes. Remove from oven, sprinkle cheese evenly over pie and continue baking until cheese is melted. Serve hot.

After reading several recipes on the web and a recipe in Marian's The Household Searchlight Recipe Book (Hot Tamale Pie by Mrs. L. P. Conley Hannibal Missouri), the above directions were constructed. Other recipes viewed included corn and/or black beans; no olives. One recipe mixed all corn meal (uncooked) into the meat mixture and baked pie till firm. The Searchlight recipe used double the water and corn meal; assembled pie in layers beginning with the cooked corn meal in baking dish. Suggested garnishes were sour cream, Guacamóle, and/or lettuce and tomatoes.
