4 Tbsp. butter or margarine
4 Tbsp. flour
1 tsp. paprika
1/4 tsp. salt
1/2 tsp. pepper
2 c. cold water
2 medium onions chopped
12 oz. package of sliced, raw mushrooms
5 large potatoes
1 1/2 c. sauerkraut juice
Sauerkraut to your liking

Brown butter then add flour in a frying pan until light brown, bubble for 1 -1 1/2 minutes then add paprika, salt and pepper.
Add cold water and bring to a boil and stir until dissolved and thickened.

Saute the 2 medium chopped onions in additional margarine or butter until lightly browned, then add to the flour and butter mixture.

Take the 12 oz. package of raw mushrooms and slice into 4ths.
Cook in water for about 5 minutes and drain off mushroom water.
Add to the thickened mixture.

Take the 5 potatoes peeled and cubed.
Cook in 6 cups of water until just tender. Do not drain this water.

Add the thickened mixture and mushrooms to the potatoes in the potato water.

Add 1 1/2 cups sauerkraut juice and chopped sauerkraut to the above mixture and cook until potatoes and mushrooms are tender, maybe about 10 minutes.

After the soup has cooled a little, taste to see if you would like more sauerkraut juice, chopped sauerkraut, salt or pepper. The flavor changes after it sits. I like to make it the day before so it seems to get a little thicker like chili does the next day.

None of the measurements are exact. You can add more mushrooms, potatoes, or onions. What ever you like.
