1 Tbsp. olive oil
1 medium butternut squash (2 lb.), peeled, seeded, and diced (about 20 oz. diced squash)
¼ lb. thick-cut bacon, cut in small pieces
½ medium red onion, vertical sliced
1 8 oz. ball fresh mozzarella, cubed
¼ c. Parmesan, grated
Flatbread, pizza dough, flour tortilla, etc. (approx. 12x17)
2 tsp. balsamic vinegar, for serving (optional)

Preheat oven to 400º.

Oil, spray, or cover large baking sheet with foil. Toss squash, bacon and onion in olive oil. Spread on sheet. Roast 40 minutes, tossing ingredients once or twice so they brown evenly. (If using a pizza stone, put it in about halfway through baking time to get it heated.) Remove baking sheet from oven and increase temperature to 500º.

Spread roasted vegetables over dough, scatter with mozzarella and Parmesan, and transfer to pizza pan. Bake until browned 10-15 minutes. Pizza dough will take longer than flatbread or tortilla.

Drizzle with balsamic vinegar, if desired.
