4 eggs
2 cups sugar
2 cups flour
1 and 1/2 cups of oil
1 cup Black Walnuts
3 cups grated carrots
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons vanilla

Directions:
Directions:
Mix sugar, eggs, and oil; beat well. Sift flour, baking powder, baking soda, salt and cinnamon and add to wet mixture, add carrots, then nuts.
Bake at 350º for one hour or until cake pulls from sides. (I test at 45 minutes.)

Frost with cream cheese icing or whatever you like.

Delicious cake first given to Peg by Sue, but Peg is the one who usually makes it. I am pretty sure that Peg doesn't sift the flour and stuff, but cannot say for sure. You really don't have to sift flour these days; just saying.
