2 tablespoons sifted cake flour
½ cup sugar
½ teaspoon salt
2 egg whites
2 cups shredded coconut



Directions:
Directions:
Mix and sift flour, salt and sugar. Beat egg whites until stiff and peaky but not too dry. Fold egg whites into dry ingredients. Add vanilla and fold in coconut.

Drop by teaspoonfuls onto lightly-greased paper covered baking sheet (or parchment paper lined tray). Allow space for spreading and rising

Bake in moderate oven 350° about 20 minutes or until golden brown and dry on surface. .
