3 tablespoons olive oil, divided
2 large heads escarole
2 ham hocks (can use smoked ones)
salt and pepper to taste
1/4 teaspoon crushed red pepper flakes
1 clove garlic, minced
3 sprigs fresh parsley, chopped
2 chicken bouillon cubes
*2 (16 ounce) cans cannellini beans, undrained

*You can use fresh beans…follow the bag directions for cooking the beans and then continue with the directions below

Cook beans in a large pot, add ham hocks, chicken bouillon cubes and let cook together until beans are tender.

Heat 2 tablespoons olive oil in a large skillet over medium heat, stir in garlic. Toss in escarole, turning to coat with oil. Season with salt, pepper, and crushed red pepper flakes. Cook, stirring occasionally, about 10 minutes, or until tender.

Add the escarole into the beans with juices, and simmer about 10 minutes.
