Steak Rollatini with Penne Recipe

1 tsp. salt
½ tsp. pepper
½ tsp. garlic powder
12 oz. mini penne or rotini pasta
6 thinly sliced sandwich or minute steaks, 1 ½ lbs.
12 slice provolone cheese, ¾ lb
1 ½ cups packed baby spinach leaves
2 containers (10 1/2oz) refrigerated bruschetta, such as Bultoni’s.

Position broiler rack so that top of meat on rack in pan will be
7” - 8” from heat source; preheat broiler. In small bowl combine salt, pepper and garlic powder. Cook pasta according to package directions; drain.

Meanwhile, pound minute steaks and roll following steps, below. Place rolls, seam-side down, on pan. Broil until lightly browned and cooked as desired in center, 8-12 minutes. Sprinkle rolls with remaining salt mixture and top with remaining cheese. Broil until cheese is melted, 1-2 minutes

Heat bruschetta until just warm. Toss pasta with bruschetta; serve with rollantini. Garnish with basil, if desired.

Roll minute steaks as follows:
1. Place minute steaks in single layer between sheets of plastic wrap. Using flat side of meat mallet, pound steaks to 1/8” thickness. Remove top layer of wrap.
2. Sprinkle steaks with half of salt mixture. Top each steak with 1 slice of cheese and ½ cup of spinach. Roll and insert toothpick to hold together
