2 packets taco seasoning
1/2 cup water
2 pounds ground beef
12 ounces cream cheese
1 cup cottage cheese
1 1/2 cups chunky salsa
1 can black beans, rinsed and drained
6-8 cups shredded romaine
2-3 cups shredded cheddar
2 cups chopped tomatoes
1 small can black olives, drained
1 cup chopped scallions
tortilla chips

Directions:
In a large skillet, brown ground beef. Drain grease, Add 2 taco seasonings and water. Simmer until liquid is absorbed, cool. In a blender, blend cottage cheese, cream cheese and 1 cup salsa until smooth. Spread cream cheese mixture i bottom of a 9x13 dish. Spread cooled beef and beans on tip. Top with lettuce, cheese, tomatoes and black olives. Serve with tortilla chips.
