1/2 cup short to medium grain white rice (uncooked)
2 cups milk
pinch salt
1/3 cup washed raisins (optional)
1/3 - 1/2 cup white sugar
1 egg
I tsp. vanilla

Directions:
Directions:
Put washed rice, salt, and milk in double boiler.
Cook over moderate heat, stirring occasionally, for approx. 30 minutes until nearly cooked - not soft. Stir in raisins. Beat egg and mix sugar into it.
Gradually add to rice, stirring frequently.
I turn down heat when I add raisins.
Cook till it thickens.
Remove from heat and serve warm or cool.
You may wish to serve with a sprinkle of cinnamon, whipped cream, or top with fruit.
