2 lbs. London Broil (sliced thinly)
**2 lbs. chicken (if you prefer chicken to beef)
1 cup plain yogurt
2 cloves crushed garlic
1 tsp. pepper
1/2 tsp. salt
2 cardamom pods
1 tsp. allspice
1 tbsp. lemon juice
1/4 vinegar

Sauce
1 cup tahini
2 cloves crushed garlic
1/2 cup lemon juice
2 tbsp. yogurt

Pita Filling
cucumber (thinly sliced)
tomatoes (cut in small pieces)
onion (thinly sliced)
parsley (chopped)
pickled turnips (optional)

Hummus (See recipe in Appetizers section)

Combine the meat, yogurt, garlic, pepper, salt, pods, allspice and lemon juice and vinegar and cook in a saucepan. If the meat over dries as it is cooking, add some water or a little olive oil.

To make the sauce, combine all the sauce ingredients and mix well. Set aside.

Prep all of your filling vegetables and display nicely on a plate.

Have your pita bread warm and open. Spread some hummus on the bread. Add the meat. Add veggies and pour sauce. Roll the pita like you would a Gyro. Enjoy.

Shawarma is thinly sliced cuts of meat such as chicken, beef or lamb rolled into pita bread with hummus and vegetables. In restaurants, this meat is placed on large, rotating cones that cook the meat slowly. At home, you can cook the meat in the oven and roll it in the pita bread with the hummus and vegetables. It's delicious.
