One dozen egg yolks
Flour
Butter

Directions:
Add 1 cup flour to eggs at a time, kneading when necessary. Dough should be stiff. Roll and cut to desired size, or use noodle press/cutter. Dry. May be frozen.

Place butter in a pan and heat slowly until bubbling. Watch carefully as lightly browned specks begin to form at the bottom of the pan. Smell the butter; it should have a nutty aroma. Remove from heat and place on a cool surface to help stop the butter from cooking further and perhaps burning. It's pretty easy to overcook browned butter and go from brown to burnt.

These amazing noodles were made Grandma Meinhardt who would roll them out and cut them paper thin, and then by my mother with the pasta cutter. The browned butter was used for the Grandkids who really didn't like Lutefisk - and we were grateful!
