Veal scallops, cut into 2" X 4" pieces, egged and breaded. (these are arranged on a large piece of waxed paper, sprinkled with garlic powder, and stuffed with a tiny amount of each of the following items)

Minced onion (dried, soaked may be used)
Prosciutto, chopped fine (or ham or salami)
Pignoli nuts (2-3 for each spiedini)
Raisins (2-3 for each spiedini)
Tomato pulp
Grated Italian cheese (Romano or Parmesan)
Dried parsley
Tiny amount of butter

Each scallop is then rolled up and secured with toothpicks, on each of which is then placed 1 bay leaf and 1 piece of onion. The roll-ups are then lined up in a greased shallow pan, a little olive oil is drizzled over them and they are oven-fried for about 30 minutes at 375°, or until brown.

When they are finished, pile spiedini in a bowl and your guests help themselves by picking them up by the toothpicks.

An excellent main dish, but a terrific appetizer, though expensive.
