2 28oz. cans Whole Tomatoes
2 cans Beef Broth
1 cup Water
1 Onion, chopped
3 stalks Celery, chopped
5 Carrots, chopped
Dash of Sea Salt
1 Beef Bouillon Cube
Fresh Ground Pepper, to taste
3/4 cup Ditalini Pasta, or any small pasta

Directions:

Simmer all vegetables, including tomatoes, until tender. Add remaining ingredients and simmer for 20 minutes. Serve with good Italian bread or French baguette.

We are lucky to have a garden. We freeze our tomatoes(about 8 large ones per bag). We plunge them into warm water and the skins come right off. They retain their water which turns out to be a good base. The equivalent would be the 2, 28oz. cans of whole tomatoes and 1 cup of water.
Don't be surprised if there a lot of tasting spoons on the counter!!
