1/2 cup salsa (medium or hot depending on taste)
1 cup shredded cheddar cheese or 4 Blend Mexican Cheese
1 cup shredded Monterey jack cheese or 4 Blend Mexican Cheese
6 eggs
1 cup sour cream (8oz)
salt
garlic powder, onion powder to taste
pepper
Optional add ins: bacon bits, cooked crumbled sausage, diced peppers, drained green chilies & mushrooms.
Garnish: sliced cherry tomatoes and sliced avocado

Preheat oven to 375 degrees. Lightly grease a 9" pie plate with PAM. Pour the salsa into the pie plate. Spread to coat on the bottom. Sprinkle the cheese evenly on top.

In a medium bowl: whisk the eggs and sour cream together until combined. Add seasonings and any of the optional items. Bake for 35-40 minutes until firm and tester inserted near center comes out clean. Let stand 5 minutes before cutting.
Garnish with sliced cherry tomatoes, chopped parsley, avocado or more salsa.
