6 cups uncooked oats (NOT instant or 5 minute type)
1 bag of Trader Joe's mixed raisins, cranberries & blueberries
1 cup slivered or sliced almonds raw
1 cup pecan pieces
1 cup pepitas
10 TBL canola oil
10 TBL honey
2-3 tsp cinnamon to taste
2 tsp vanilla

In large bowl: combine oats, raisins, nuts together and mix. In a small bowl: combine oil, honey, vanilla and cinnamon and stir. Slowly pour honey mixture over oats, stirring constantly. Place on two parchment paper lined cookie sheets with sides. Make sure it is a single layer or underneath will not get cooked. Bake approximately 15-18 minutes until light brown. Do not overcook it will taste bitter. Bake at 350 degrees in center of oven. Cool, then break up into pieces and place in airtight container. Recipe can be cut in half.Optional: diced dried fruit & shredded coconut. Beware: some fruits get super hard once you bake them. Measure oil FIRST then honey as it will slide off spoon!
