2 pkgs active dry yeast
3 c warm water
4 Tbs vegetable oil
4 Tbs honey
2 Tbs caraway seeds
4 tsp salt
2 c rye flour
5 1/2 c all purpose flour

Directions:
Directions:
Sift both flours together and set aside.

In large bowl, sprinkle yeast over warm water. Stir until dissolved. Add oil, honey, salt, caraway seeds and 4 cups of the flour mixture. Beat for 2 minutes or until well mixed.

Add remaining flour mixture (3 1/2 cups) an 1/2 to 3/4 cups of warm IF NEEDED. You'll have to be the judge of the water, you don't want the mixture too sloppy, just "tacky". Beat until smooth.

Cover and let rise in warm place until doubled (about 30 minutes).

Stir down and beat about 40-50 strokes by hand.

Turn into greased 9" X 5" X 3" loaf pans (2) or smaller loaf pans you'll get 3 loaves.

Let rise loosely covered in warm place until batter reaches the top of the pan (about 40 min)

Bake at 350º for 48 minutes - smaller loaves might be done a smidge earlier.
