3 1/2 lb boned snapper fillet
6 sprigs fresh parsley
6 sprigs fresh sage
1 chopped tomato
12 pieces julienned orange peel
6 pats butter
6 anchovy fillets
salt
pepper

Directions:
Directions:
Preheat oven to 450ºF. Prepare a 12" foil square for each snapper fillet. Butter one side of each foil square and place one fillet in the center of each. Top each with tomato, 2 pieces of orange peel, an anchovy, one sprig each of parsley and sage, a dash each salt and pepper and a pat of butter. Fold up foil like an envelope and place foil packets on a cookie sheet. Bake for 10 to 15 min until flesh flakes easily. Remove herbs, anchovy and orange peel before serving.
