2 Cups Flour
2/3 Cup sugar
1/2 Cup shredded coconut
1 Cup coconut milk
1 teaspoon baking power

Directions:
Directions:
First preheat over to 400. In a bowl, combine the flour, sugar, shredded coconut and baking power. Then add the coconut milk and knead to form a smooth, rather sticky dough. Cut and butter sheets of foil about 10X12 in. Place some dough in the middle that is small enough to be folded in by the foil but big enough so that if fills the foil. Then wrap dough in the foil burrito style. Cook the Fa'apapa in the over for around 35 minutes or until they are golden brown.

This family recipe has been part of the Samoan culture for many generations. Our grandma told us an experience she had as a young child in Samoa. There was a severe hurricane that destroyed almost all the food and made fishing impossible for a time. Her father made the only food he could, fa' apapa. Only they used coconut cream from real coconuts on the island, flour that other countries had donated and occasionally sugar or baking power. Their family survived on this for many months until the damage from the hurricane was repaired. Masuisui
