1 cup dried black beans (canned or do your own from dried)
1 red onion, chopped
4 egg tomatoes, chopped
1 red pepper, chopped
3 oz fresh coriander, roughly chopped
2 avocados, peeled and chopped
1 mango, peeled and chopped
150 g (4 3/4 oz) spinach, ends removed

Dressing
1 clove garlic, crushed
1 small red chili, finely chopped
2 tbsp. lime juice
1/4 cup olive oil

Directions:
Directions:
Place beans, onion, tomatoes, pepper, coriander, avocado, mango and spinach into large bowl and toss to combine.
To make dressing, place all ingredients in bowl, whisk, pour over salad and toss.
