2 -16 oz. pork tenderloins, trimmed of fat
1/4 cup lime juice
1/4 cup soy sauce
2 tbsp. honey
2 tbsp. grated fresh ginger
4 cloves minced garlic
Corn tortillas
1 recipe Siracha Slaw

Directions:
Directions:
1. Place meat in slow cooker. Combine next 6 ingredients and pour over meat.
2. Cover and cook on low for 4 - 5 hours or on high for 2 to 2 1/2 hours.
3. Remove meat, reserving cooking liquid.
4. Shred meat with two forks and toss with cooking liquid to moisten.
5. To serve, divide meat mixture among tortillas and top with Siracha slaw.

Siracha Slaw:
1. In medium bowl, combine 3 cups shredded cabbage with carrots (coleslaw mix), 1 1/2 cups finely shredded red cabbage, 3/4 cup snipped fresh cilantro, 3/4 cup mayonnaise, 3 tbsp. siracha sauce and 3 cloves miced garlic.
2. Season to taste with salt and pepper.
