2 fish fillets (white fish works best)
Flour, seasoned with salt and pepper to taste
1 egg, beaten
Olive Oil

LEMON CAPER SAUCE
3 tbsp. butter, cut in chunks
2 tbsp. capers
Chopped fresh parsley, to taste
1 tbsp. lemon juice

Directions:
Directions:
Dust fillets with seasoned flour, then dip in beaten egg, then dust again with seasoned flour. Heat pan, add olive oil and heat until hot. Place fish in hot oil and cook until golden brown, turn and cook other side until done. Set aside, keeping warm.

Lemon Caper Sauce: When fish is cooked, wipe out pan so that some of the flavor of the fish is still there but definitely don't clean it. Add butter, capers, parsley and lemon juice and over low heat, whisk mixture, cooking just until butter has melted and sauce holds together. Do not use high heat or butter will separate. Serve fish topped with sauce.
