2 cups sweet potatoes, cooked and mashed
4 cups of spaghetti sauce (I make my own from tomatoes, spices, vegetables)
2 large zucchini squash, based with oil and baked in oven for 20 minutes
1 large eggplant, brushed with oil and baked in oven for 20 minutes
3 cups pine nuts, ground
4 cups spinach

Directions:
Directions:
Skin, slice, baste zucchini and eggplant with oil and put in oven for 20 minutes. Turn once.
Cook sweet potato in oven until soft (about 30 minutes at 375º).
Place small amount of shaghetti sauce on bottom of 10" X 15 " pan.
Layer tomato sauce, zucchini, spinach, sweet potatoes, pine nuts, eggplant like you would for lasagne.
Bake in oven for 30 minutes at 350º

I was looking for a nice lasagne recipe without the noodles. I made up this recipe and find it is delicious and hearty.
