Ingredients:  
1/2 C light Brown sugar
1/4 C granulated sugar
1 tsp ground cinnamon
1 tsp ground nutmeg
1 pinch Kosher salt
1/2 cup unsalted butter
6 Sweet Potatoes, peeled and sliced into 1/3 " rounds
2 tsp vanilla extract
3/4 c pecans, chopped and toasted

Directions:
Directions:
combine sugars cinnamon. nutmeg and salt in a small bowl. set aside
in a large skillet or Dutch oven. melt butter over medium heat
Add sliced sweet potatoes and toss and coat with butter
Sprinkle sugar mixture over buttered potatoes and stir to coat.
Reduce heat to low. cover skillet and continue cooking 1 hour.stirring occasionally.
Once sauce has caramelized the potatoes and they are fork tender, srir in Vanilla.
The sauce will thicken once off heat.
toast Pecans and top the potatoes
