2 cups sifted all purpose flour
4 tsp baking powder
˝ tsp salt
˝ tsp cream of tartar
2 tsp sugar
˝ c shortening
2/3 c milk

Directions:
Directions:
For biscuits, sift dry ingredients into bowl. Cut in the shortening till like coarse crumbs. Make a well; add milk all at once. Stir quickly with fork just till dough follows fork around bowl. Turn onto lightly floured surface. (Dough should be soft). Knead gently 10 to 12 strokes. Roll or pat dough ˝ inch thick. Dip 2 ˝ inch biscuit cutter in flour; cut dough straight down. Bake on ungreased baking sheet in very hot oven (450 F) for 10 to 12 minutes. Makes about 16 medium biscuits.
Gwen doesn’t use a biscuit cutter, but instead uses a sharp knife and cuts straight down to make “dough blocks”. By cutting straight down, the biscuits rise higher.
