2 cups half & half
4 eggs
1/2 cup flour
1 1/2 cups sugar
1 can evaporated milk
1 1/2 pints (3 cups) whipping cream
pinch of salt
1 tsp. vanilla
2/3 cup water

Directions:
Directions:
Caramelize the sugar in a hot skillet, stirring constantly. Add 2/3 cup water. Stir until sugar is dissolved and it has evaporated into a heavy syrup Set aside to cool. Separate the eggs. Beat the whites stiff and set aside. Beat the egg yolks for 3 minutes.
Add flour and salt to the milk and evaporated milk. Beat in caramel mixture and beaten egg yolks. Cook mixture in a double boiler, stirring constantly until custard begins to thicken and coats a silver spoon. Fold in egg whites. Put through a fine sieve.
Whip the whipping cream and fold into custard mixture. Add vanilla and freeze.
This makes 1 gallon of ice cream.
