1 (32 ounce) container ricotta cheese
1/2 cup powder sugar
2 tsp. Vanilla (Dominican or Mexican vanilla makes a huge difference in taste)
1/2-1 Cup Chocolate Chips

With a spatula mix cheese until smooth, add powder sugar. Stir in all remaining ingredients.

You can pick up cannoli shells from a local Italian deli or use Pepperidge Farm Bordeaux cookies.
For an alternate dessert. Bake a white cake per box directions. Cool, split and drizzle some Amaretto on the bottom layer. Top that layer with filling and place top cake layer on. Frost with whipped cream or cool whip. Use coconut, chocolate chips or pistachios on the side and top with a maraschino cherry.
