Zucchini Bread Recipe

3 C. Flour
2 tsp. Baking Soda
1/2 tsp. Baking Powder
1 1/2 tsp. Cinnamon
3 Eggs
1 1/2 C Sugar
1 C Vegetable Oil
2 tsp. Vanilla
2 C Coarsely grated Zucchini
8 oz can crushed pineapple well drained

Directions:

Preheat oven to 350º
Combine dry ingredients, set aside.
Beat eggs slightly in large bowl. Add sugar, oil and vanilla.
Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients and stir only until moistened.
Spread into 2 well greased and and floured loaf pans.
Bake for 1 hour or until toothpick comes out clean.
Cool fir 10 minutes before removing from pans.

This was my grandmothers recipe. I have modified it a bit by adding a 1/2 cup dark rum and chocolate chips. Its Ahmazing!!
