1 med. onion finely chopped
2 cloves garlic minced
2 t. olive oil
3 lbs. ground beef
2 cans sliced mushrooms
1 15 oz. can tomato sauce or 3 pints of drained tomatoes
2 cans tomato paste
11/2 tsp. salt
11/2 tsp. basil
11/2 tsp. oregano leaves
1/2 tsp. oregano powder
4 c. shredded mozzarella cheese
1 bag medium curly egg noodles cooked, drained and rinsed
2 eggs beaten
750 ml. cottage cheese
1 c. grated parmesan cheese
1 pkg. well drained chopped spinach

Directions:
Saute onion and garlic in olive oil. Add meat, brown and drain excess fat. Add undrained mushrooms, sauce, paste and seasonings. Simmer for 15 minutes. Mix eggs, cottage cheese, parmesan, and spinach.
In deep 9 x 13 pan layer 1/2 of meat mix, 1/2 of noodles, all of cottage cheese mixture, other 1/2 of noodles, then meat sauce. Cover with grated mozzarella. Bake at 325º for 20 minutes. If ingredients are cold, bake for 1 hour.
