firm ripe tomatoes cut in small chunks
1/3 c. white vinegar
1/3 c. sugar
1/4 c. oil
1/4 to 1/2 tsp. salt
fresh ground pepper to taste
1/2 tsp. basil
1 green pepper thinly sliced
1 white onion thinly sliced
small carrots thinly sliced (adds nice colour)

Directions:

Cut up tomatoes the day before and let them drain in a colander overnight.
Shake or mix together the dressing ingredients. Pour over the vegetables about 1 hour before serving.
