1 tbsp. butter
2 onions, minced
1 1/4 lb. (about 10) carrots, peeled and diced
1 sweet potato, peeled and diced
4 c. vegetable stock
1 1/2 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. milk
1 c. croutons

Directions:
Directions:
1. In large stock pot, heat butter, cook onions
2. Add carrots, sweet potato, stock, cumin, salt, and pepper
3. Bring to boil
4. Reduce to medium, cover and simmer 20min
5. Purée in blender until smooth (may have to do so in batches; careful, it's hot)
6. Blend in milk
7. Return to pot and reheat
8. Garnish with croutons and serve
