1/2 cup raw cashews soaked overnight or for at least 4 hours
1 butternut squash peeled, seeded and diced into bite-sized pieces
1 cup water
2 garlic cloves
2 tbsp nutritional yeast
Juice of 1 lemon
1/2 tsp of smoked paprika
1/2 tsp chili powder
1 tsp of sea salt
1/8 tsp liquid smoke
1 medium package of shell pasta
Cheddar cheese

Directions:
Directions:
Soak cashews in water in the refrigerator for 4 hours or overnight.
Pre-heat oven at 425 F place cubed squash on baking sheet lined with foil. Drizzle with olive oil, sprinkle with 1/4 tsp chili powder and paprika. Bake for 30 to 40 minutes or until tender.
Drain cashews add garlic, lemon juice, paprika, chili powder, and half of the cooked squash. Blend until smooth then add salt and liquid smoke and blend again.
Cook pasta according to directions.
Coat pasta in blended mixture and add the rest of the cooked squash.
Top with cheddar cheese
