2 tbsp. Olive oil
1 small jalapeņo pepper, finely chopped
2 cups cooked quinoa (1/2 cup quinoa uncooked quinoa +1 cup vegetable broth)
1/4 cup red onion, finely chopped
2 cloves of garlic, minced
1 can of black beans, rinsed and drained
1/2 cup chopped cilantro
1/2 cup bread crumbs
1 large egg, lightly beaten
1/2 tsp. Cumin
1/4 tsp. Coriander
1/4 tsp. Paprika
1/2 tsp. Salt
1/2 tsp. Pepper
1 avacado sliced to top on burger

Heat 2 tablespoons of the oil in a medium sized skillet over medium heat. Add jalapeņo, red onion and garlic and cook until soft while stirring occasionally.
Transfer the cooked mixture to a bowl of a food processor fitted with the "s" blade. Add beans and quinoa to mixture and chop in food processor until combined.
Transfer mixture from the food processor to a large bowl and add cilantro, bread crumbs, egg and spices. Mix with a spoon and your hands.
Form the mixture into burger patties and place on a heat skillet with oil. Cook burger until they're browned and crisp on both sides.
Top the burger with avacado and desired toppings and sauces.
