1 stick margarine
2 small cans sliced mushrooms
˝ cup chopped onion
˝ cup chopped bell pepper
1 cup reg. long-grain rice
2 cans beef consommé
salt & pepper to taste

Directions:
Directions:
Saute onion, peppers, mushrooms & rice in margarine until rice begins to brown. Place in casserole and add soups, salt & pepper. Microwave on high 25 minutes (covered with Saran Wrap) or until done. Or can bake at 350' for 45 minutes to an hour.
