1 large Vidalia Onion or sweet onion

3/4 Cup Flour
1/4 Cup Cornmeal
1/2 tsp Baking Powder
1/2 tsp Salt
1/4 tsp Baking Soda
1/4 tsp Cayenne Pepper
1 Egg
1 Cup Buttermilk

Oil for deep frying.

Cut onion into 1/2" slices; separate into rings.

In a bowl, combine flour, cornmeal, baking powder, salt, baking soda and cayenne. In another small bowl, combine egg and buttermilk; stir into dry ingredients just until moistened.

In an electric skillet or deep-fat fryer, heat 1" of oil to 375º. Dip onion rings into batter. Fry a few at a time for 1 to 1 1/2 mins on each side or until golden brown. Drain on paper towels (keep warm in a 300º oven.

To make onion straws, I simply dip onion rings into 1 can evaporated milk; then dip in flour. You may repeat this process again to make a thicker crust on onion. Deep fry.
