FILLING;
1 1/2 C. water
1 C. sugar
1/3 C. cornstarch
1/4 tsp. salt
4 egg yolks
1/2 C. lemon juice, (3-4 lemons)
2 tbsp. lemon peel, grated
2 tbsp. butter
MERINGUE;
8 tbsp. sugar
1/3 C. water
1 tbsp. cornstarch
1/2 tsp. vanilla
4 egg whites
1/4 tsp. cream of tartar
1 baked 9" pie crust

Directions:
Directions:
FILLING; Mix water, sugar, cornstarch and salt in a saucepan. Bring to simmer until the mixture becomes thick and translucent. Whisk in egg yolks, lemon juice, peel and butter. Return to a simmer. Cook and stir for 1 minute. Remove from heat and cover with plactic wrap to keep hot and prevent skin from forming. Set aside. Preheat oven to 350 degrees. MERINGUE; Mix 1 tbsp. sugar, water, cornstarch and vanilla in a saucepan. Bring to a boil; boil for 1 minute. Remove and let cool. Beat egg whites in a bowl with the electric mixer until foamy. Combine with 7 tbsp. of sugar and cream of tartar. Beat sugar mixture into egg mixture until soft peaks form. Add cornstarch mixture and beat until stiff peaks form. Pour hot filling into pie crust. Immediately pour meringue over filling. Bake for 12-15 minutes and the peaks of the meringue is golden. Cool before serving.
