3 eggs
3/4 c. sugar
1/2 tsp. salt
1/2 c. vegetable oil
Grated peel and juice of 1 lemon
3/4 c. matzo meal
1/4 c. potato starch
3 large apples, peeled and sliced thin
1/4 c. cinnamon sugar
1/4 c. finely chopped nuts

Directions:

Preheat oven to 375º. Beat the eggs in a stand mixer for 5 minutes. Add the sugar and beat until combined. Blend in the salt, oil, lemon peel and juice. Fold in the matzo meal and potato starch. Spoon half of the batter into a greased 8 inch square pan. Cover with apples and sprinkle cinnamon sugar. Cover with the remaining batter and sprinkle with nuts. Bake for 30 minutes.
