Spice mixture: (will be more than needed for one batch)
1/2 tsp. salt
1 tsp. cayenne pepper
1 tsp. ground cumin
1/2 tsp. black pepper
1/2 tsp. garlic powder

Con Queso:
1 lb American cheese
3/4 cup water
2 Tbsp finely chopped onion
1 can chopped green chiles
2-3 Tbsp. strained, chopped canned tomatoes

Directions:
Directions:
1. In a double boiler combine the American cheese, water, onion, chiles and tomatoes. Cook slowly until cheese melts.
2. Add 2 tsp. of the spice mixture to start and add additional spice mixture to taste.
3. Cook slowly until mixture reaches right dipping consistency. Additional water can be added at any time to thin the mixture if it gets too thick.
4. To serve this hot, I put it in a crockpot on low and serve with tortilla chips

NOTE: I sometimes don't want to open a whole can of tomatoes so I use a bottled salsa which is always in the fridge.
