3 egg whites
3 TBSP. powdered sugar
1/2 lb. (2 sticks) margarine -- or even better, unsalted butter, softened
3 TBSP. oil
1/2 C. coconut
1 baking powder
1 vanilla sugar

Directions:
Directions:
Whisk the egg whites till foamy and whisk in the powdered sugar. Add the softened margarine or butter and mix well. Add the oil, coconut, baking powder, vanilla sugar, and as much flour as needed to make a dough that does not stick to your hands but is also not too dry or hard.
Roll the dough in pieces between your hands to form a long roll about finger-width. Cut each strip into 3 or 4 even pieces.
Bake at 325-350º on cookie sheets for about 15 minutes till very lightly browned; you want the cookies to cook through but also maintain their whiteness, so you may lower temperature slightly.
Roll baked cookies in powdered sugar (can have vanilla sugar added to it). Store in tins or airtight containers; they will each day be tastier!

You can add ground walnuts to the dough if you like; just reduce the flour slightly.
