1/2 C olive oil
1 large yellow onion, chopped
2 tsp salt
2 C green or brown lentils, picked over and rinsed
6 C water
1 C long grain or brown rice
1 T cumin

Directions:
Directions:
Heat oil in large pot on medium-low heat. Add onion and 1 t salt, cook for 10 minutes, stirring occasionally.

Add lentils and water. Cook for 20 minutes, stirring occasionally.

Stir in rice, remaining salt and cumin. Cover and cook for 40 minutes, stirring occasionally.

Serve warm or at room temperature with tzatziki sauce or a Mediterranean salad.
