1 eggplant peeled and cubed
1 medium onion, chopped
1 can diced Rotel tomatoes
2 cups frozen corn
2 cups frozen okra, diced
2 tablespoons extra virgin olive oil
2 cups water





Directions:
Directions:
Saute onion and eggplant in olive oil in skillet, place in small casserole dish
Add Rotel tomatoes, corn, okra and water
Add salt, pepper, and minced garlic to taste

Spray a large oven-proof bowl with Pam
Bake at 400 degrees for 45 minutes
