1 1/2 sleeves original saltine crackers
1/2 C. butter, softened
3 tbsp. sugar
4 egg yolks
1 (140z.) can sweetened condensed milk
1/2 C. lemon juice (4 lemons)
Whipped cream or meringue
coarse-grain salt
MEGINGUE:
4 egg whites
3/4 tsp. cream of tartar
pinch of salt
1/2 C.sugar

Directions:
In a large plastic baggie, crush crackers with your hands. Then roll with a rolling pin until pieces are pea-sized. Add butter and sugar, and knead until crumbs begin to stick together. Press crust on the bottom and up the sides of a 9" pie plate. place crust in refrigerator and chill for 15 minutes then immediately bake at 350 degrees for 15 minutes. Cool. Combine egg yolks, sweetened condense milk and lemon juice. Mix until smooth with electric mixer. Spread filling into crust: (If you like meringue whip it up and top the pie.) Bake at 350 degrees for 15-17 minutes or until set. Cool for 30 minutes then refrigerate for 4-6 hours or until pie is completely chilled. Sprinkle coarse-grain sea salt on top. MERENGUE; Beat egg whites with cream of tartar and salt on medium-high speed with an electric mixer for 1-2 minutes or until soft peaks form. Gradually beat in sugar. 1-2 tbsp. at a time, until stiff glossy peaks form and sugar is dissolved. Spoon meringue onto filling and spread to edge of crust to seal well. Bake at 350 degrees for 18 minutes or until meringue is golden brown. Cool for 30 minutes then refrigerate for 4-6 hours. Sprinkle with coarse-grain sea salt to serve.
