3 1/3 lbs. beef brisket, fat trimmed and cut into thin strips
3 cloves garlic, minced

1 tbsp. vegetable oil
2 large onions, sliced
1/2 C. red wine
1/2 C. beef broth
1 C. chili sauce
1/2 C. apple cider vinegar
1/2 C. dark brown sugar
1 bay leaf

Preheat oven to 350 degrees. Rinse the brisket an cut it into thin pieces. Spread with garlic and s/p. Heat oil in a flame-proof roasting pan over medium-high heat. Brown brisket on both sides, remove from heat. Reduce the heat to medium and cook the onions until brown. Add the red wine and beef stock. Cook for 1 minute, scraping up the browed bits. Stir in chili sauce, vinegar, brown sugar and bay leaf. Return the meat to the pan and spoon the sauce over it. Cover and roast until brisket is fork-tender, 2-3 hours. Remove from the oven, uncover and cool. Refrigerate overnight. When ready to serve, slice the meat and return it to the sauce. Reheat at 350 degrees for 25-30 minutes.
