1 lb. corkscrew pasta
salt/pepper
olive oil
1/2 lb. chorizo, casings removed and chopped
3 tbsp. butter
2 shallots, chopped
3-4 cloves garlic, chopped
3 tbsp. flour
1/3 C. dry sherry
1 C. chicken broth
1 C. whole milk
2 C. Manchego Cheese, shredded
2 C. frozen peas, thawed
1/4 C. pimento, chopped
1/2 C. parsley, chopped

Directions:
Directions:
Bring pot of water to a boil, add salt and cook pasta. Drain. In a skillet, drizzle olive oil, add chorizo and cook until crisp, 2-3 minutes. Transfer to paper towel and drain. In a saucepan, melt butter, shallots and garlic. Cook until tender, about 5 minutes. Whisk in the flour and sherry. Stir in broth and milk, cook until thickened; season with s/p. Stir in cheese and fold in peas and pimento. Drain the pasta and toss in to the saucepan with the sauce and top with chorizo and parsley. Heat for 10 minutes, keep stirring while heating.
