1 c. well-dried cornmeal
5 c. scalded milk (1 L homo milk and the rest 1%)
1 c. hot cream (can use whipping cream or cereal cream)
1/2 c. butter or margarine
1 medium onion, minced
1 tsp. salt
2 tsp. sugar
1/4 tsp. allspice
1/4 tsp. pepper
2 eggs, beaten
1 tsp. baking powder

Directions:
Directions:
In a deep heavy skillet, saute onions in butter until golden brown. Add the cornmeal, salt, sugar, spices and blend well using a wire whisk. Slowly add the milk and cream alternately, stirring constantly to avoid lumps, while the mixture cooks and is well blended. After the cornmeal absorbs all the milk, stir in the well-beaten eggs and baking powder. Pour into a 3-quart well-buttered casserole and bake uncovered at 350º F for 1 hour. Serves 6.
