1 tbsp. canola oil
1/2 C. sweet onion, thinly sliced
1 C. sauerkraut, rinsed and drained
1 tsp. sugar
1/2 C. beer
Unsalted butter, softened
8 sliced rye bread
1/2 C. Russian dressing
4 sliced Swiss Cheese
1 lab. pastrami, thinly sliced

Heat oil in medium nonstick skillet over medium-high heat. Add onion and cook for 2 minutes or until slightly softened. Add sauerkraut and sugar; cook 3 minutes. Pour in beer; cook 3 minutes or until it is evaporated, stir occasionally. Remove from heat. Butter one side of bread slices. Place 4 slices bread, butter side down, Spread with 1 tbsp. Russian Dressing. Top with one fourth of sauerkraut mixture, 1 slice Swiss Cheese and one fourth of pastrami. Spread unbuttered sides of remaining 4 slices of bread with remaining Russian dressing; place dressing side on pastrami. Heat large nonstick skillet over medium heat. Place 2 sandwiches in skillet; press firmly with spatula. Cook 3 minutes or until bread is golden. Turn; place second large skillet on top of sandwiches and press firmly. Cook 4 minutes or until golden. Repeat with remaining sandwiches.
