2 T. thyme leaves
1 1/2 T. fresh lemon juice
1 T. Dijon mustard

2 T. unsalted butter, softened
3 T. extra virgin olive oil

Directions:
Directions:
In a mini food processor, combine thyme leaves, lemon juice, Dijon mustard and salt. Pulse for one minute. Add the butter and process until completely smooth. With the machine on, add the olive oil in a thin, constant stream until fully incorporated. Season the sauce with salt and pour into a sauceboat.

When your fish fillets are ready, pour sauce over fillets and serve.
