500 g Flour
1 c. Water
⅓ tsp. Salt
2 T. Oil

Filling:
500 g Seedless Sour Cherries
200 g Sugar
2 T. Flour

Directions:
Directions:
Mix, in a bowl, flour, water, salt and oil to make your dough. Once well minced, put the dough into a zip-lock or a plastic wrap and put in the fridge for 30 minutes.

For the filling, in a separate bowl, sprinkle all the sugar on top of the cherries (that you've made sure are clean of cherry pits) and let stand for 20 minutes, until there is juice at the bottom. You then pour that juice into a separate bowl. Add the flour to the cherries and mix.

Roll out the dough into 2mm thickness in the shape of little squares (3-4 cm in length). Place some filling in the middle, fold the square in half and pinch the edges closed.

Boil perogies in boiling water with a dash of salt while stirring gently with a wooden spoon (to prevent them from sticking together) for 3-5 minutes until they float to the top.

Drain them and pour the cherry juice that was set aside all over them.

Instead of fresh sour cherries, you can use canned ones (drain the juice). In that case, don't add any sugar or flour (they work as filling all by themselves). And at the end, use butter instead of the juice.
