"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
12 medium jalapeño peppers
1 lb ground Italian sausage meat (I like the hot rather than the mild flavour)
1 8 oz package cream cheese
1 c parmesan cheese

Directions:
Directions:
Slice the peppers in half lengthwise. Clean out the seeds and the white membrane for this is the hot part of the pepper. Best to wear gloves when handling the sliced peppers.

Brown the sausage meat, drain fat. Add the cream cheese and parmesan cheese to the meat. Stir over heat until well blended. Fill the peppers.

Bake in a preheated 420º oven for 20 minutes. Serve hot. Enjoy!
